Carlo’s Bake Shop, Cake Boss and Cannoli

In May, I traveled to New York City – one of my favorite cities in the world! I love the hustle and bustle, the many sights to see, and the fabulous musicals Broadway has to offer. While visiting, my friends and I made a quick trip to Hoboken, New Jersey, home of Carlo’s Bake Shop and TLC’s Cake Boss star, Buddy Valastro.

I’ve been asked numerous times, too many to count actually, if I wanted to be the next Cake Boss. Although I’d be happy to join the ranks of the famous male cake designers in North America, I’m not looking for my own TV show. I do, however, hope that my cakes are considered delicious, artistic, masterpieces much like Buddy’s are!

While visiting Carlo’s Bake Shop, I was able to enjoy a few of the delectable treats. One of my favorites was the famous cannoli, a Sicilian pastry dessert. Who doesn’t love a fried pastry shell filled with a sweet, cream filling?!?

If you are interested in trying your hand at making a cannoli, here’s a recipe, supposedly from the Cake Boss himself:

Ingredients:
Shells
    8 store-bought cannoli shells
    1 (12-ounce) bag semisweet chocolate chips
Filling
    1 quart good-quality ricotta cheese
    2 cups confectioners’ sugar
    1 teaspoon fresh orange zest
    1/4 cup chopped citron (candied orange peel)
    2 teaspoons vanilla extract

Directions:
For the Chocolate - Melt chocolate over a double boiler and dip half of each cannoli shell in the chocolate. Allow any excess chocolate to drip off then lay shells out on a silpat or waxed paper-lined tray to set while you prepare the filling.

For the Filling - Line a colander with cheesecloth, add the ricotta and let drain until very dry. Squeeze out any excess moisture in cheesecloth. Place the ricotta into the bowl of a stand mixer and beat on high for 5 to 7 minutes until light and fluffy. Add sugar, orange zest, chopped citron and vanilla extract, then mix on medium until just combined. Place the filling into a piping bag and fill chocolate dipped cannoli with the mixture. I love your program and I watch it along with my dad because he loves Italian foods because it brings him memories. He wants to know ir there is any way the bakery can send some cannolis all the way to where we live. He really is craving those for a while and would be delicious to get to have a taste of your bakery. Thank you.

I tried to make the cannoli cream but it taste gritty to me its not smooth. What am I doing wrong?

I tried a cannoli by the Cake Boss today and it by far the best Cannoli I have every had in my life. How many calories are in it. Thanks, Jackie

We went to Carlos bakery on Saturday, March 23, 2013. That was the best cannoli I have ever had in my whole life!!! It's all I can think about. It's driving my family members crazy.

I love your show Mr buddy and I wish one day I could order a cake for you to make me and I love the designs but I am far in south African but I know nothing is impossible .
